My Cà Ri Gà [Vietnamese Chicken Curry] recipe was inspired by one of my favorite books, from my favorite author; The Committed by Viet Thanh Nguyen. At the beginning of the book, there's a reference to how ‘Vietnamese have made French culture into their own.' Specifically, on pages 9-10 on the symbolism of the baguette -- "That dialectical baguette, along with a cucumber salad in a rice wine vinaigrette, a pot of chicken curry with potatoes and carrots, a bottle of red wine, and, eventually, a caramel flan in a dark brown puddle of caramelized sugar..." that had been prepared by the narrator's aunt. Inspired by this theme, I wanted to show the different nuances (spicy, funky, aromatic) of Cà Ri Gà that makes it distinctively a 'Vietnamese Curry.' And yes, it's amazing with a baguette.

Instructions

Prepare the Chicken
  1. Ask the your local butcher to cut your bone-in chicken thighs in half
  2. Thoroughly rinse chicken thighs before using
  3. Drain in a food colander to remove excess water
Make The Curry
  1. Preheat a cast-iron pot for 2-3 minutes on High
  2. Add 2 tbsp of Cooking Oil
  3. Add Chicken Thighs and brown on one side for 5 minutes
  4. Gradually add Minced Lemongrass, Shallot, Ginger, Garlic, and Fresh Turmeric
  5. Add 6-8 Makrut lime leaf
  6. Add any lemongrass scraps
  7. Gradually add Turmeric Powder, Coconut Sugar, Tiger Sa Te, Fermented Chili Paste, Kosher Salt
  8. Stir occasionally, to prevent further browning
  9. Add cut Potatoes, Onions, and Carrots.
  10. Cook for 5 minutes on medium heat.
  11. Mix thoroughly with a spoon
  12. Add 16 oz. of Chicken Stock
  13. Add 16 oz. of Coconut Water
  14. Add 1 can of Coconut Milk
  15. Add 2 tbsp, Son Fish Sauce
  16. Mix thoroughly with a spoon
  17. Bring to a simmer
  18. Cook for another 45 minutes
  19. It is ready to serve when potatoes are fork-tender
