This Yuzu & Coffee is not only delicious. But it’s genius!At ABACA in San Francisco, Chef Francis Ang draws from mutli-culture influences of regional Filipino cuisine; paired with his own culinary experiences abroad; giving birth to the Modern Filipino Food Movement. According to Chef Francis, “Australia has an amazing coffee culture” His favorite is a cappuccino (or flat white) with orange zest. This, in turn, inspired him to create a flat white coffee with his favorite fruit (yuzu); paired with cardamom and roasted white chocolate. And the best part is, that this drink isn’t overly sweet. It is, however, beautifully aromatic and intoxicatingly floral. The addition of the Black cardamom, adds an element of smokiness, complimenting the Yuzu, and adding awesome flavor layers, which I haven’t seen yet in coffee.
Ingredients
Yuzu Chocolate Sauce (Yield: 1 quart)

Instructions
Yuzu Chocolate
- Place the cream in a pot and bring it up to a simmer.
- Pour the hot cream into a blender, and add in the white chocolate and salt.
- Blend on low speed until all the chocolate has melted.
- Add in the yuzu jam and blend on high.
- Strain into a fine-mesh sieve.
Yuzu Flat White
- Place 2 Tablespoons of Yuzu Chocolate into the cup
- Pull a double-espresso shot and stir until the chocolate dissolves.
- Top off with steamed milk
- Use a Microplane to grate a sprinkle of black cardamom onto the steamed milk
