Plant-based Fried Rice

Fried rice is a popular street food item of East Asian, Southeast Asian, and South Asian cuisines. And its popularity is not just in its flavor, but its resourcefulness. A traditional recipe calls for day-old rice and chopped left-overs. But if executed correctly results in beautiful alchemy of flavors, textures, and temperature.

Cook Jasmine Rice
  1. Place 1 cup of rice grains into a fine-mesh strainer
  2. Rinse rice thoroughly under running, cold faucet water
  3. Rub the rice grains between your hands to release rice starch
  4. Rinse rice until the water runs clear [3- 5 minutes]
  5. Drain rice with a fine-mesh strainer
  6. Add washed rice into a small pot
  7. Add 1.5 cups of water into the small pot with rice
  8. Place the pot on medium heat
  9. Once the pot comes to a gentle simmer, place the pot on low heat. And cover pot with a lid
  10. Cook rice for 10 minutes stir every 5 minutes
  11. Take the pot of rice off the heat after 10 minutes. But make sure to keep a lid on the pot for another 5 minutes. The rice at this point is almost cooked and will need time to finish cooking off the heat.
Fried Rice Method
  1. Preheat a large, Nonstick 10" Frying-Pan on high heat for 30 seconds
  2. Add cooking oil to the pan
  3. Add sliced Shiitakes. Stir fry for another 1-2 minutes on high heat
  4. Add onions, garlic, and ginger. Saute for 1 minute on high heat
  5. Push sliced shiitakes, onion, and ginger to one side of the frying pan.
  6. Add Jus Egg to the pan. Scramble the faux eggs for 3 minutes on medium heat. [cook eggs 'well done']
  7. Add cooked Jasmine Rice. Saute for 3 minutes on high heat
  8. Add Tamari to the rice
  9. Saute for 2 minutes. Or until the rice starts to slightly caramelize. Rice should not be clumpy
  10. Take Frying-Pan off heat
Assemble
  1. In an 8 oz. bowl add 1/2 cup of fried rice
  2. Garnish the bowl with Cilantro, Tomato Slices, and Cucumber Slices.
  3. Top the bowl with 1/2 tsp of Tiger Sa Te

Notes:

  • Jus Egg is a plant-based egg substitute made from mung beans.
  • Soy Sauce has gluten
  • Tamari is gluten-free
