Grilled & Oven Roasted Prime Rib

This gorgeous, thick-cut #ribeye, grilled over @royaloakcharcoal. Seasoning is kept to a minimum because it doesn’t need it. Just salt and pepper. It’s more important to understand how to cook different cuts of beef before you start slathering all sorts of spices on it. Here’s a great recipe to see how great beef can taste on its own.

Ingredients

  • 5 lbs., Prime Rib
  • ½ cup, Kosher Salt
  • ¼ cup, Ground Black Pepper

Instructions

Night Before, Season Your Prime Rib (12 hours Prior)
  1. Prime Rib is a thick cut of meat. And requires a few hours for the seasoning to penetrate. Apply this method (at least) 12 hours prior to cooking
  2. Mix salt with black pepper
  3. On a roasting rack heavily coat your beef (oil is not needed, Prime Rib typically has a lot of natural fat)
  4. Place the seasoned Prime Rib and roasting rack back into your refrigerator.
Tempering Your Beef (2 hours Prior)
  1. Prior to cooking, pull your prime rib from the refrigerator
  2. Let sit at ambient temperature for 2 hours
Ready to Grill
  1. On a hot, preheat a charcoal grill to 500 F.
  2. Brown the Prime Rib on all sides for 2-3 minutes.
  3. Once all sides are brown, place on a roasting rack and allow it to rest for 30 minutes.
  4. Set aside to prepare to roast in the oven.
Oven Roast the Prime Rib
  1. Preheat your oven to 350 F on the bake setting
  2. Place Prime Rib in the oven and bake for 90 minutes or when the internal temperature is 130 F. (rotate every 30 minutes)
  3. Make sure to probe the thermometer in the thickest part of the Prime Rib.
  4. Allow Prime Rib to rest on a roasting rack for at least 15 minutes prior to carving.
Carve the Prime Rib
  1. Remove ribs from loin
  2. Slice loin into ½” slices
  3. Place on a plate accompanied by common steak favorites [i.e, mashed potatoes, creamed spinach, buttered corn, horseradish, etc.]

Why I Love This Recipe

Prime Rib can be painstakingly difficult to make. However, with the right set of instructions, it’s as simple as “set it and forget it.”


HEAT

Heat is an extremely important element for this grilling method.

Make sure to use Bintochan Charcoal or Royal Oak Charcoal for high heat grilling

I would avoid gas grilling if possible
