People think I’m the kitchen wizard of our household. Not true. Continually, I have to correct that speculation. I cannot match my wife, Jean, in our household kitchen. She is the most amazing person I’ve ever cooked with. Not only does she cook, but she makes plant-based ferments (Kimchee Jeanius) as well. She is continually teaching me about Korean cuisine and cooking techniques. And given that March is my birthday month (I am turning 21🤭) I wanted to share her recipe, my favorite birthday meal, Galbi.
This recipe encompasses two of my favorite items that Jeans makes: Galbi and Kimchee.
Galbi (Galbi-Gui or grilled rib) is a type of gui in Korean cuisine. "Galbi" is the Korean word for "rib", and the dish is usually made with beef short ribs. When pork spareribs or another meat is used instead, the dish is named accordingly
Kimchee, or Kimchi, a staple in Korean cuisine, is a traditional side dish of salted and fermented vegetables, such as napa cabbage and Korean radish, made with a widely varying selection of seasonings including gochugaru, spring onions, garlic, ginger, and jeotgal, etc. It is also used in a variety of soups
Ingredients
Galbi [Korean BBQ Beef Short Ribs]
- 2 lbs, Beef Short Ribs, ½ “ cut
- 1 each, Asian Pear, peeled and chunked
- 1 each, Yellow Onion, chunked
- 3 each, Garlic Gloves
- ½ cup, Organic Sugar ( 1 tbsp Stevia or 2.5 tbsp Monk Fruit Sugar)
- ½ cup, Soy Sauce [Low Sodium]
- ½ cup, Carbonated Water
- ½ cup, Scallion, Sliced
- 2 tbsp, Ginger, Minced
- 1 tsp, Black Pepper, Ground
- 1 tbsp, Sesame Oil
Instructions
Marinate Galbi
- In a blender, puree the following ingredients:
- 1 each Asian Pear [peeled and chunked], 1 each Yellow Onion [peeled and chunked], 3 each garlic cloves, ½ cup organic sugar [sweetener alternative: 1 tbsp Stevia or 2.5 tbsp Monk Fruit Sugar], ½ cup Low Sodium Soy Sauce, ½ cup Carbonated Water, ½ cup Sliced Scallions, 2 tbsp Minced Ginger, 1 tsp Ground Black Pepper, and 1 tbsp Sesame Oil.
- Pour marinade into a Ziploc bag
- Place beef short ribs into Ziploc bag with marinade
- Marinate beef for at least 30 minutes (max 12 hours)
Cook Galbi
- On a preheated grill, grill ribs 5 minutes on each side
Assembly
- In a large bowl, first, start with RightRice into a bowl
- Arrange grilled beef and kimchee adjacent to the RightRice.
- Garnish with scallions and toasted sesame seeds
