Nhau is a cuisine in Vietnam that is centered around drinking. Otherwise known as beer food (Offal and fatty cuts, charcuterie and lots of game). Essentially, Vietnamese Brasserie. Nhau is part of everyday life in Vietnam, with co-workers and friends, afternoons or late at night, eaten in circles outdoors at sidewalk cafes.

Often served family style, this event will be centered around a whole hog from Devils Gulch with 5 pork inspired courses beer pairing curated by Health Spirits Sf



Huyết Heo

pork blood terrine, boiled peanuts, medley of seeds, sambal, banh da

Giò Thủ

Head cheese, liver pâté, mm, pickled spring alliums

Cha Lua

Vietnamese “Country” Ham, steamed in the husks of corn, pork floss, toasted rice, cumin and cress


Handmade pasta, pork belly & pan drippings, lemon grass, oyster sauce 

Nem Nuong Giò Heo

Fermented pork stuffed in trotter, turmeric, spring vegetables
